last patch

Some foods are better leftovers than others. There are foods that taste almost better reheated and on the other hand some, that you have to eat straight after making or not at all. Home made lasagne might be one of the best leftovers, but a close second might be fried rice. I made a patch on Wednesday and finished it today. It still tasted very good.

There might be a zillion different recipes around, I make a version like this:
fried rice for two
1 small onion thinly sliced
2 carrots thinly sliced
1/2 yellow paprika thinly sliced
1-2 garlic gloves chopped
2 eggs beaten i a bowl
2 tbs oil (mild taste, not olive)
1/2 ts dried chili
200g prawns (melted if frozen)
soy sauce
fish sauce
boiled basmati rice for two

Heat the oil in a hot wok, season the oil with the chili and pour in the onion slices and the carrot slices. Let soften a bit, then add the garlic and paprika. Let soften a bit more. Add the eggs, let cook for a moment without mixing and the start turning the mixture to get the eggs to form small clumps. Add the prawns and season the mix with the soy and fish sauces. Mix in the rice (oil can be added at this point, if the mixture is too "dry"). Then taste and add soy and fish sauce if needed. Don't cook too long at this point, the vegetables will go mushy and the prawns turn too chewy. Serve hot.
Will be good reheated the next day, though the vegetables will be softer.

On the red plate was the dessert, which I ate first with coffee. My friend gave us Runebergs tarts which she had made, today is Runebergs day. He is Finlands national poet.

Lis superlovely kitchen. (via happysilly)
