(makes one large oven pan or two smaller pie forms)
for batter
3 free range eggs
3 dl (brown) sugar
3 dl milk
100 g butter or soft baking margarine melted (or 1 dl sun flower oil)
3 dl plain flour
3 dl graham (or other whole grain) flour
1 tbs baking powder
2 tsp vanilla sugar
to top
1,5 litres of apples peeled and chopped to smallish pieces
1 tbs ground cinnamon
(optional: crumbles on top, made of 50 g melted butter, 1 dl sugar and 1 dl plain flour mixed together to form a crumbly mixture)
Heat the oven to 200 C (390 F). Mix the flours, baking powder and vanilla in a separate bowl. In a nother bowl mix the eggs and sugar (no need to beat very much), then add milk, butter and flower mixture in turns to make a soft batter. Spread on a large(!) oven pan over baking paper (or if you have a nonstick pan, that'll do as well, with a little bit of butter spread all over). Top with the chopped apples spread evenly on the surface and sprinkle with some ground cinnamon to your taste. Spread over the optional crumble mixture, if you wish. I didn't, and felt like it did'nt need it either. Bake in the low level of the oven for around 30 minutes, until golden and baked through. Enjoy with some custard and nice coffee for fika, evening snack and breakfast, or any other way you like.
Nice new song from Keane.
Edit: fixed some typos, lazy me, not proof reading.
